Azari Cuenca Maitret
Best known for founding Litoral restaurant almost 14 years ago in the La Condesa neighborhood of Mexico City, charismatic chef Azari Cuenca Maitret’s experience has earned him a special place on the national culinary scene.
Chef Azari began his career in the kitchens of the most prestigious hotels in Mexico including Presidente InterContinental Mexico City and Four Seasons Hotel Mexico, D.F. where he studied under Maîtres Cuisiniers de France, Chef Fernand Gutierrez. He also worked at the prestigious Marquis Reforma Hotel & Spa under the tutelage of chefs Reichrat Raoul, who has a Michelin star in Romaine, France, and Chef Eric Mayer. He also worked at the Industrial Club with Chef Olivier Lombard.
The turning point in Chef Azari’s career was when he went to work in San Sebastian, Spain, under the tutelage of Chef Juan Mari Arzak, considered to be one of the great masters of New Basque cuisine and a three Michelin star chef; and his daughter Elena, considered the best female chef in the world.
After working with Arzak, he traveled to Lyon, France and studied under Paul Bocuse and Jean Fleury where learned the secrets of cutting edge and traditional French cuisine.
But undoubtedly, the greatest distinction of Chef Azari has been his ability to find his own culinary expression, rich with haute cuisine influence, but always incorporating the flavors and recipes of traditional Mexican gastronomy, including the Mexican coast lines.
He is currently chef director and owner of Grupo Litoral, which includes: Litoral, Zydeco Bar, Carbonvino, Terre, Maruka, El Aserrin and the chain El Camaron Panzon and Niuyorquina.
