- 1 tbsp lime zest grated
- 1/2 cup passion fruit juice fresh
- 1/4 cup Dama Tequila
- 1 tbsp agave nectar
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 tsp adobo sauce
- 1 tsp kosher salt
- 1 tsp ground pepper fresh
- 6 each mint leaves fresh chopped
- 3 pounds chicken wings split at the joint, tips removed

- Prepare the wings: Preheat the oven to 350° F. Season with salt and pepper then arrange on a baking sheet in a single layer. Cook until just brown and crisp, about 45 minutes
- Make the sauce: Combine the lime zest and the passion fruit juice, Dama Tequila, agave syrup, cayenne pepper, cumin, adobo sauce, 1/2 teaspoon of salt and 1/2 tablespoon pepper in a bowl. Pour over the warm wings let it marinate at least 30 minutes. Preheat a grill to high. Grill the wings until marked, 10-15 minutes turning as needed. Transfer the marinade to a saucepan and cook until slightly thickened about 8 minutes (you can do this on the grill as well). Drizzle the wings with the sauce and top with chopped mint leaves.
