Ingredients
- 6 each pieces of chicken
- 2 tbsp lime juice fresh
- 3 tbsp olive oil
- 1 each onion finely chopped
- 2 each garlic clove finely chopped
- 3 each chives sprigs
- 3 each tomatoes fresh finely chopped
- 1/2 cup raisins
- 1 tsp lime rind grated
- 3 tbsp brown rum
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp hot red pepper finely chopped
- 1 each pineapple fresh

Instructions
- Marinate the chicken in lime juice and salt and pepper for 30 minutes. In a pan heat the olive oil, add the chicken pieces and brown both sides. Transfer to a large dish. Add garlic, onions and chives to the pan with the oil cook until translucent and tender. Return the chicken to the pan and simmer for 30 minutes add the rest of the ingredients to the pan. Season to taste, add a little water if needed and simmer for 5 minutes. Peel the pineapple core and slice in rings; place pineapple rings on the bottom of serving platter and spoon chicken and sauce on top. Serve with Black Beans and rice on the side.
