Marinate the chicken in lime juice and salt and pepper for 30 minutes.
In a pan heat the olive oil, add the chicken pieces and brown both sides. Transfer to a large dish. Add garlic, onions and chives to the pan with the oil cook until translucent and tender. Return the chicken to the pan and simmer for 30 minutes add the rest of the ingredients to the pan. Season to taste, add a little water if needed and simmer for 5 minutes. Peel the pineapple core and slice in rings; place pineapple rings on the bottom of serving platter and spoon chicken and sauce on top. Serve with Black Beans and rice on the side.
